Made From the Maguey Plant

Traditionally, Mezcal is handcrafted by small scale producers. Made from the maguey plant, another form of the agave, it is roasted in pit ovens for three days which gives its intense and distinctive smoky flavor. Mezcal is distilled in either clay or copper pots from anywhere between one month up to 4 years to further modify the flavor.
